I realize, that one of the things that makes my veganhood easy to adapt to, beside my strong feeling against animal suffering, is being prepared.... This even includes lunch during my work week.... While there are a couple places I can get food from near my job (one of them is even a vegan restaurant), I tend to eat the same thing all the time and after a while get bored... Not to mention eating out daily can become costly.... So, I started preparing multiple vegan-friendly food items that will take me through the week, causing me to spend less money, have variety and feel a sense of accomplishment for actually cooking.... LOL.... Some of my favorites tend to stretch, and I usually make enough to share with my daughter, who's vegetarian....
I make an awesome spaghetti sauce (which I also eat over brown rice).... And if I throw some corn in the mix, it becomes a completely different meal...
This is my vegan spaghetti.... Made with veggie ground sausage, "Field Roast Italian Sausage" and an organic veggie spaghetti sauce...
This is "Barilla Whole Grain Spaghetti".... The only brand I've found so far, that's made without dairy....
I haven't rid myself of processed foods yet, I love convenience.... LOL.... This is a vegan "Field Roast Meatloaf" with Honey BBQ sauce... YUMO!!!!!!!!!!!!.... LOL
This was my first attempt at vegan mac & cheese.... I used Barilla Whole Wheat pasta thingies, "Daiya" vegan shredded mozzarella and cheddar cheese (suggested to me by the guy at whole foods), almond milk, and Earth Balance vegan butter (supposed to be) spread.... LOL... I say that about the Earth Balance, because I was addicted to butter (would have been my cause of death... LOL) and nothing tastes like it... LOL
